When Lizzy Bennet pretended to her new coworkers that she had a boyfriend, it was only to get Will Collins off her back. When she pretended that boyfriend was Darcy, well, it's just that she panicked and his was the only name that popped into her head.
Sure, she hated the guy and usually made no secret of that fact, but she wouldn't make a big deal of the ruse at work. It would fizzle out in a week or two, and Darcy would never find out, so no harm would be done.
