Without much blood family to call his own, Zuko chose his family. Unfortunately, that meant he lacked a certain outside perspective that family provides when you're in a relationship. Iroh already adored Toph. The rest of the Gaang clearly liked her better than they liked him, even after all these years. His father and Azula were out of the question.
That left him with one last ditch option to introduce his girlfriend to family she didn't already know.
