Maybe Louis wanted to retell the story because he got it wrong. Maybe he felt that his memory was clearer now. Or maybe he decided it wasn't fair that he left her out. Their sunshine in the night.
Enter Catherine- the one he forgot to tell about while he was too busy focusing on Lestat. Suddenly some of the holes in the story make a little more sense to Daniel as he learns that Catherine was the one who made everything make a little more sense.

Summary
Daniel finds human connection so close but so distant as a fledgling.
He had been turned as a man aged, obviously, with physical faults no longer, but felt oh so pained as he forced his phone to ring out when his daughters would on the off chance, call.
The house his kids grew up in was sold, for he had bought a special apartment with his earnings from Interview, His bed was now made redundant, replaced with a deep purple coffin. It seemed even now, the plants he tried keeping alive were dying quicker than they would when he was alive.
He was over analyzing, as journalists do, but his heart was sore, he found life in everything surrounding him, like he was the only one dead.
Daniel did his best to fit back into human life, to keep up what little connection he had with his children, his extended family, publishers. It becomes tiresome after a while, pretending to be something he's not, but he holds on to a small thread of hope.
OR;
Daniel is on a walk, extremely love and touch starved, and pounces on a human in broad daylight. He spirals realising she's everything he’s not. (Following the line from S2 Ep8)

Claudia built a good life after surviving Paris.
